This easy Yellow Chicken Curry is one of the best and simplest curries I make! It is comprised of juicy pieces of chicken simmered in a robust and flavorful sauce consisting of coconut milk, yellow curry powder, tumeric, garlic and ginger. It comes together quickly and is served piping hot, usually over basmati rice. I hope you like it!
Serves 6
Ingredients:
2 tbsps vegetable oil
2 pounds boneless skinless chicken breast or thighs, cut into 1.5 inch cubes
2 large onions, diced
4 large garlic cloves, minced
1 inch fresh ginger, peeled and grated
1 tsp turmeric
250 ml concentrated chicken stock
1 cup water
1/2 - 389 ml can coconut milk, full fat
2 tbsp honey, or brown sugar
1/2 tsp ground black pepper
2 tbsps cold water
Juice of 1 lime
1 tbsp cornstarch
salt to taste
Directions:
- Preheat large skillet on medium heat (6 out of 10) and swirl oil to coat. Add chicken and brown slightly on a few sides
- Add onion, garlic and ginger and cook for 5 minutes, stirring occasionally.
- Sprinkle in yellow curry powder and turmeric; saute for 30 seconds, stirring often.
- Add water, chicken stock, honey or brown sugar and pepper, stir until incorporated and bring to boil.
- Reduce heat to low (3 out of 10) and cook uncovered for 15 minutes, stirring occasionally
- Stir in coconut milk and allow to simmer 5 more minutes, avoid boiling
- In a small bowl, whisk cold water, lime juice and cornstarch and pour into sauce. Stir and cook for a few minutes until sauce has thickened.
- Adjust seasoning, to taste, and serve over basmati rice, brown rice or quinoa with a side of Quick & Easy Flatbread
Notes:
Use more or less fresh ginger and yellow curry powder, depending on your desired spice level.
Avoid boiling the dish once the coconut milk is added to prevent curdling it.
Refrigerate leftovers for up to 5 days and freeze up to 3 months - in an airtight container.
