This recipe is being posted at the request of my sons, who asked me to bake homemade rye bread. This one is dark and dense, yet remarkably soft with a good crumb. The molasses and cocoa are what add the depth of flavour you'd expect from dark rye. While caraway seeds have a warm, pungent, earthy taste which elevates this bread to another level. Serve it up as part of a delicious sandwich or, on its own, as buttered toast.
Yield - 1 loaf/12 slices
Ingredients:
1 1/4 cups warm water
1/3 cup molasses (fancy, not blackstrap)
2 tbsps vegetable oil
2 1/2 cups bread flour
1 cup rye flour
1/2 teaspoon salt
2 tbsps cocoa powder
2 1/4 tsp instant yeast (1 8g packet)
1 tbsp caraway seed (optional)
1 egg, beaten - for egg wash
Directions:
1. Add liquids to bread pan of bread maker
2. Whisk together dry ingredients
3. Add dry ingredients on top of wet and set bread maker to dough setting
4. When dough cycle is complete, remove dough to a lightly floured surface and punch it down, then roll into an oblong shape that will fit in a loaf pan
5. Grease and flour the loaf pan, then place the dough into it
6. Cover with parchment and a tea towel - place in a warm location to rise for 1 hour (using the oven with the light on is ideal)
7. After 1 hour, preheat oven to 375 degrees, leave dough covered
8. Remove coverings from dough and score the top, brush with beaten egg
9. Bake 30-40 minutes or until it sounds hollow when tapped, if top crust is over-browning, tent with foil (internal temp should be 200-210 degrees)
10. Remove from the oven and let cool completely, on a wire rack, before slicing
Notes:
The dough may not rise fully in the bread maker, it rises much more during the second proofing and really rises while baking.

When measuring out the molasses, to prevent it from sticking to the cup, pre-spray the cup with a bit of cooking spray.
