Fresh green pea pods are in abundance here ATFT and I had so many I couldn't eat them all raw. So. I adapted this recipe to use them up. It is sweet and tangy, bursting with summer flavour. I served it warm alongside our marinated and smoked spatchcock chicken. However, it pairs well with any protein or is great all by itself
Serves: 4 as a side/2 as a main
Ingredients:
3/4 cup uncooked couscous - medium sized
3/4 cup water
200g fresh green peas, shelled
80g feta cheese, roughly chopped
60g walnut pieces, toasted
Vinaigrette:
10g fresh basil leaves, chopped
1/3 cup olive oil
1/2 shallot, diced
3 garlic cloves, minced
2 tbsps honey
4 tbsps white wine vinegar
1/8 tsp sea salt
1/8 tsp black pepper
