Crispy Oven 'Fried' Chicken Wings

It's Grey Cup night and we are cheering with a stack of mouth-watering chicken wings.  These chicken wings aren't your corner bar stool deep fried wings, which are full of saturated fats and usually breaded, but they are equally appealing.  The trick is our special dredge and elevated cooking technique.  You can serve with sour cream, hot sauce (like Frank's Redhot Buffalo Wing Sauce), blue cheese dip and/or a mix of carrot and celery sticks for a delicious treat.

Serves 6

Ingredients:

4 lbs chicken wings

4 tbsps baking powder (make sure it's POWDER, not soda)

2 tbsps paprika (smoked, if you've got it)

2 tbsps granulated onion

1 tbsp granulated garlic

1 tbsp ground black pepper

1 tsp salt

spray oil

 

Directions:

1. Preheat oven to 425 degrees or, preferably, on convection at 410 degrees

2. Line a rimmed baking sheet with foil and place an elevated rack inside, spray rack with oil spray

3. Dry chicken wings by patting them well with paper towel

4. Place in a large bowl once dried

5. Add all spices into a small bowl with the baking powder and whisk to combine

6. Sprinkle 1/3 mixture over wings in the bowl and toss, add 1/3 more dredge and toss again, repeat until all evenly coated

7. Shake any excess dredge off the wings and place them on the prepared rack, in a single layer.  It's okay if they touch, as they will shrink while they bake

8. Place tray in hot oven and set timer for 35 minutes

9. At 35 minutes, check to ensure even cooking and rotate wings away from the edges if necessary. Continue to bake another 10-15 mintues 

10. Wings are done when they are crispy and cooked to an internal temperature of 165 degrees

11. Serve with your choice of dipping sauces and/or veggies

 

Notes:

The magic of baking powder is in its ability to draw moisture out of the chicken skin, and to the surface, where it can evaporate quickly, contributing to crispy results

Choose aluminum free baking powder to avoid any metallic taste

These wings are superb refrigerated and eaten cold within three days, or reheated in a 350 degree oven until warm - about 15 minutes
