Quick & Easy Flatbread

This yeast-free flatbread is so simple, yet it has a complex flavour, thanks to the yogurt.  It can serve as a stand-in for naan bread, as the base for mini pizzas or as a stury wrap in lieu of tortillas or pitas.  You can make the dough up to a day in advance and store, wrapped, in the fridge.  Just bring it to room temperature before you plan to portion and roll it. Double or triple the recipe, as necessary, for a crowd.  

Yields 6 flatbreads

 

Ingredients:

1 cup full fat Greek yogurt

2 cups bread flour, plus more for dusting

1/2 tsp baking powder

1/2 tsp salt

 

Directions:

1. Wisk dry ingredients in the bowl of a stand mixer fitted with the dough hook attachment

3. Add yogurt, stir to combine on medium-low (3) speed for about 1-2 minutes, scraping sides and adding water a few tablespoons at a time, if necessary

4. Continue to knead for 2-3 more minutes to create a smooth dough

5. Remove the hook, form dough into a ball and cover the bowl with a damp towel, let rest 30 mintes

6. After 30 minutes, lightly flour a work surface and place the dough ball in the center, portion into 6 equal portions 

7. Shape a ball out of each portion and roll flat with a floured rolling pin, about 1/4-1/8 inch thick, dust with more flour and set aside

8. Heat a frying pan - either well seasoned cast iron or non-stick - over high heat (6 out of 10) Do not oil the pan

9. Once hot, place one dough circle at a time in the dry pan and cook about 1 1/2 minutes per side, or until dark golden brown spots appear on the underside

10. Flip the dough and repeat on the other side, it should puff up on this side

11. Remove the finished flatbread to a plate, lined with paper towel and cover with a clean dish towel while cooking the rest of the flatbreads

12. Serve plain alongsided our Butter Chicken, buttered or garlic buttered

 

Notes:

The yogurt adds a wonderful tang to the flatbreads, though you don't actually taste the yogurt.

The thinner you role the dough, the crispier they will be, initally.  Resting them under a towel helps make them more flexible and chewy.

Leftovers store well in the fridge in an airtight container for 2 days and in the freezer for a couple of months.
